Soufflé au Fromage

Mais Oui! No one makes this delicious classic anymore, not even in France. Whipped egg whites are folded into "Pate à Choux" (a dough made with egg yolks, flour, and butter, cooked over medium heat, Gruyère cheese added to it). We add various mystery cheeses as we have them, and bake the mixture in a 12 oz individual soufflé mold. Recommended as a second course or a main course, as it takes 15 minutes to cook.
