Rob Ittner
Owner and Wine Buyer
After earning his BS
in Accounting from the University of Vermont in 1993,
Rob Ittner worked as a manager for Bourbon Street Grill
in Burlington Vermont. Fifteen months later the same owners
of Bourbon Street Grill put him in charge of overseeing
the opening of a second restaurant, "Mona's". Rob over
saw the operations of Mona's as Senior Manager for it's
first year.
Rob then took time off
to attend the Culinary Institute of America's Continuing
Education of Advanced Studies campus in Napa Valley, California.
This intensive fifteen week program gave Rob valuable
knowledge in the fields of Culinary Arts and Wine.
Rob then returned to
Burlington Vermont were he helped open New England Culinary
Institute's newest flagship restaurant, NECI Commons.
He worked as an Instructor at New England Culinary Institute
(NECI), where he taught the Dining Room Operations Class
and the first-year wine program. While instructing, he
also oversaw the day to day operations of the new restaurant.
Since moving to Aspen
Rob was the restaurant manager at the Hotel Jerome until
he took the opportunity to pair up with Charles Dale at
Renaissance in the fall of 1999. Rob has also acted as
sommelier at The Cooking School of Aspen, where he taught
wine classes.
